Foodie Friday: Italian Stuffed Shells

This is my all time favorite recipe for Italian stuffed shells, which came about accidentally. I am not the creator of this tasty dish or the chef in the house so I have to give credit to my husband. He chose the ingredients and it turned out really well.










Ingredients:
½ Green bell pepper chopped
½ Red bell pepper chopped
½ Orange bell pepper chopped
2 Cups of mushrooms chopped
½ lb. Ground turkey
1 Cup of Ricotta cheese
½ cup Parmesan
1 can of your favorite marinara sauce
¾ cup fresh basil – chopped
Dash of Oregano & Garlic salt
1 Box large shell noodles
2 Tablespoon olive oil







  1. Fill a pot of water and add olive oil to keep noodles from sticking. Bring to boil. Dump in noodles and let cook til slightly soft.
  2. Preheat oven to 350 degrees.
  3. In a large mixing bowl combine all vegetables, ground turkey, ricotta & Parmesan cheese, basil and oregano. 
  4. When noodles are partially cooked strain and let cool. Carefully pull the noodles apart before they are completely cooled.
  5. Form ping pong sized balls of meat, cheese and veggie mixture.
  6. Put 1 meat ball inside each large shell and close each shell.
  7. Place in baking dish with opened side of noodle down.
  8. Pour red sauce over stuffed shells
  9. Place dish in oven to cook for 35 minutes. 
  10. Remove stuffed shells from oven
  11. Let stand to cool for 5 minutes.
