Foodie Friday presents: Roasted Garlic Potato Salad

Port City Tavern in Muskegon shared with us their favorite recipe for Roasted Garlic Potato Salad. It is a rather simple recipe that takes less than 30 minutes to whip together. Take this recipe as a dish to pass or serve at your next family gathering. 

Ingredients:
12 red skin potatoes
10 cloves of garlic
2 tsps olive oil
2 stalks of celery
1 small red onion
2 1/2 cups of mayo
1 tbsp dijon mustard
3 tsps salt
3 tsps pepper
3 tsps granulated onion

Serving Size: 8
Preparation Time: 
10 minutes 

Cook Time: 15 minutes


Directions:

  1. Preheat oven to 350.
  2. Put garlic cloves on tin foil. 
  3. Drizzle olive oil over garlic 
  4. Close up tin foil and roast the garlic in the oven for 20 minutes.
  5. Cut your potatoes in 1/4 inch squares then boil in water until tender.
  6. Remove from water and cool.
  7. Chop onions and celery to desired size. 
  8. When potatoes are cool, mix all ingredients in a large bowl.
  9. Add roasted garlic last.
  10. Let sit for 10 minutes in the fridge.
  11. Serve and ENJOY!
